Sweet Potato Pancakes


I hope you all had a wonderful Thanksgiving! Our day was filled with family, laughter, and yes food, food, food! I have had a slight obsession with all things sweet potato, yams, and squash this season and my absolute favorite part of Thanksgiving dinner is the sweet potatoes!

With all the leftovers taking over our fridge I thought it would be fun to find a different way to utilize them, and who doesn’t love a good breakfast for dinner recipe?

Using leftovers:


  • leftover mashed sweet potatoes

  • 1 egg

  • 1 tbsp baking powder


  • Place your mashed sweet potatoes in the blender.

  • Add one egg and one tablespoon baking powder.

  • Blend till smooth.

  • Scoop onto warmed grill and cook until brown on both sides.

These turned out a bit more dense and not very fluffy, but I liked them so much! On top of being a fun way to use leftovers the flavor was amazing! I topped these with banana and a drizzle of honey.

From scratch:


  • 3 medium sweet potatoes, peeled

  • 2 eggs

  • 2tbs baking powder

  • cinnamon and nutmeg to taste

  • honey

  • brown sugar


  • Peel, cut, and boil sweet potatoes till soft

  • Mash potatoes and place in blender

  • Add eggs, baking powder, and seasoning then blend till velvety

  • scoop and place batter on grill

  • cook on around 4 minutes per side

  • top with brown sugar and honey

If you have ever had a potato pancake you know the texture isn’t like a normal pancake. Instead of being fluffy they are soft, smooth, and if you aren’t used to it textually feel a bit under cooked. Also, I do smaller scoops because they can fall apart easier then your average pancake.

If your getting bored with the simple heat and eat your left overs I hope this inspires you to mix things up. We still have one more Thanksgiving dinner to go tonight, and I am so excited to nom up some potato pancakes tomorrow morning!
